The art of distilling Irish Whiskey is one of the oldest skills and has been practised for over 800 years. A carefully cherished tradition, the care and patience taken to distil what the Irish call Uisge Beatha – “The Water of Life” – is part of the Irish way of life.
In the sixth century, monks from Ireland took the secret of distilling Uisge Beatha to Scotland and today the Scots make Scotch Whisky. The English landed in Ireland in 1197 and took a liking to Uisge Beatha calling it Whiskey with an “e” – no doubt so that the discerning whiskey drinker of today would readily recognise the difference!
Tullamore Dew is acknowledged throughout the world as being one of the finest of all whiskeys highly esteemed by the connoisseur for its light, delicate flavour, smoothness and inimitable bouquet. The soft water used in distilling comes from a small river flowing through the Dublin mountains which experts agree has unique properties and it is this, together with the fine Irish barleys and grains used, which forms the basis of the liquor.
Unlike other whiskey Tullamore Dew is distilled no less than three times to ensure perfect purity and then “new” whiskey is carefully laid down in old casks. It is during the long years of lying in cask, slowly and gently maturing in the cool of the warehouse that Tullamore Dew acquires the rare, mellow flavour of fine, old Irish Whiskey."
